chips and salsa

I’ve been craving homemade chips and salsa for days now. So I’ve decided to go with a Mexican dish for tomorrow’s dinner. I first thought to make tacos, but those are easy (though mighty yummy), so I think I’m going to try something new like chili relleno. Wish me luck!

Applesauce Granata

I completely forgot about the dessert I made friday night! Finished putting it together earlier today and really enjoyed it, though my mother said it wasn’t for her tastes, but I suspect that is because she doesn’t like to eat anything that doesn’t contain a ridiculous number of calories and sugars. =)

Friday, 11 September -- Tuna Casserole

I ended up making tuna casserole for dinner last night. On the side I served peas, salad with a sort-of homemade thousand islands dressing, and Pillsbury crescent rolls.

The tuna casserole was surprisingly simply considering I’ve never made it before and was preparing it from memory after years of watching my mother. I ended up forgetting the onions, and I added the cheese after adding the egg noodles instead of before, but that didn’t seem to make much of a difference and it turned out nearly perfect.

The closest recipe I could find to the casserole I made is on allrecipes.com. Other recipes I found online called for a can of mushroom or chicken soup, but one doesn’t always have those on hand. A couple differences between this recipe and my mother’s is to dice up some onions to combine with the butter, flour, and salt. We also prefer to serve our peas on the side and mix them into the casserole on our plates if we so choose. I also added a layer of shredded cheese on top before popping the casserole in the oven.

At the beginning of the recipe I posted above it reads, “This is easy, filling, and can be quick if you omit the baking step, which I often do.” My family has eaten it this way on many occasions when we’re short on time and it is just as delicious.

The salad dressing I made was simply a combination of mayonnaise, ketchup, salt, pepper, and a bit of milk for thinning. It’s really easy to whip up and tastes great on any dinner salad.

Finally, the rolls I made were Pillsbury Crescents. I had only had them once before, at a friend’s house, when I was 11. But I remembered them being the best part of the meal and decided to try them again. They’re fun to roll and require no other prep. They come out buttery and delicious and were a perfect addition to the entire meal.

And so it begins

Today is the first day I will be making dinner for the family as part of the agreement I’ve made with my mother. I am currently trying to decide between

- pork chops with lemon spinach and mashed potatoes

- tuna casserole with peas, salad, and dinner rolls

- turkey & gravy on toast with stuffing and green beans

And I’m thinking for dessert I’ll try making this applesauce granita seen here from the newest Food Network star Melissa d’Arabian. <3 her.
